Day 45

Breakfast: my usual scrambled eggs this time, I added in a peach smoothie

Peach Smoothie:
  • 2 cups of sliced frozen peaches
  • 1/4 cup of white grape juice
Midday Meal: About 20 almonds and a cucumber, romaine lettuce, and baby carrot salad

Snack: 1/2 bag of popped kettle corn

Dinner: A salmon fiesta!

Southwestern Salmon Skillet:
  • 2 salmon fillets, coarsely cut in strips (doesn't have to be perfect)
  • 1/4 sliced zucchini
  • 1/4 cup sliced red bell pepper
  • 1/4 cup sliced white onion
  • 1/4 cup of chopped white onion
  • 1/4 cup brown rice
  • 1 can of black beans
  • black pepper
  • Habanero hot sauce
  • 1 tablespoon of canola/olive oil
Prep: Start off my boiling the brown rice to a rolling boil then reduce to a simmer for about 30 minutes. While that is cooking, on medium high heat, prepare a can of black beans and chopped onions. Sprinkle hot sauce and stir. In a 10 in skillet, preheat to medium high and add the oil. Then sautee the salmon until it is about medium done. Now, add all the remaining vegetables and black pepper and cook until done. Voila!


Total cost: $4.75 a serving

Now, we just made a healthy and quick skillet that did not break the bank. The  can of beans and bag of brown rice cost approximately $.79. The white onion, zucchini, and red bell pepper cost a total of about $1.50-and you can keep reusing them after you are finished with this recipe. The salmon was the most expensive item on my list coming in at a mere $3.27 a package-which I can use the remaining salmon for 1 more recipe.
