Meet the Blogger!

Hello! My name is Shanice and I am the founder and sole author of this blog! Thank you for coming to Eating Clean on a College Budget and I hope you enjoy my site--or as I like to call it, my baby.
I am currently a healthy living college alumni on a mission to prove that anyone can eat clean on a budget! At first I thought it would be easy, but after YEAAARS of running this blog, I know that it can be anything but. To make matters worse, I was diagnosed with celiac disease about a year ago and now have the unfortunate pleasure of trying to eat clean AND gluten free.
Here are some facts about me:
  • Graduated cum laude in 3.5 years! Woot!
  • My lifestyle of eating healthy and regular physical activity has been going on for nearly a decade now. Over the past 12 years, I became a decorated athlete in karate and track and participated in volleyball, lacrosse, basketball, and power lifting.
Starting college, I was determined to NOT gain the "Freshman 15." Luckily, my school has a comprehensive recreation center that is open until midnight. There are 2 cardio areas, 2 weight rooms, and indoor track, and at least a dozen different group workout classes offered a day. This literally made it impossible (or at least in my mind) to gain weight. By the end of the year, I had accomplished my goal and managed to maintain a size S/2 frame.

Now, I am a college alumni with no gym membership or access to a state of the art gym. The best I have is my rundown apartment "work-out center". I do workout there almost daily but not as hard as I did back in college. However, during work I walk for about 45 minutes of my hour long lunch break.

When I first started this journey, I read an article on clean eating but I felt like it was too "raw" for me to follow so I decided to stick to something more attainable. If you want to read that site, click here

ANYTHING WITH GLUTEN IN IT- this one is for my personal health

  • Rice
  • Bread/ tortillas
  • Macaroni
  • Pasta
  • Cakes
  • Pies
  • Cookies
  • Donuts
    Virtually all fast foods
    Processed meats
    • High fat, sugar, or sodium frozen poultry, meat, and fish varieties
    • Canned meats
    • Prepackaged/Pres-seasoned meats (ex. fajita steak, orange chicken)
    • Breakfast and lunch meats
      Snack and convenience foods
      Drinks 
      • Juice
      • Drink Mixes
      • Sports Drinks
      • Soda
      • Any other kind of specialty drink
      I must admit, there are times when it is hard to abide by these rules. Parties, holidays, and eating out make it challenging to eat both clean and gluten free but since my CLOSE friends and family love me so much, they have made it a part of their lives to make sure there are gluten free alternatives for me. You would think that since it's gluten free that it's clean but you are sadly mistaken. There are a variety of delicious gluten free foods out there that are processed! But, when you are in my position and are STARVING, you are not going to forgo eating. There have been times where all I will eat are an order of fries or chips and dip only because there was nothing else that was safe for me to eat.

      1. During my first semester of college I have NOT eaten well. And now about a month into the second semester I see myself on that terrible track again. I remembered seeing this ingenious blog and now it is my inspiration! I looked at all your delicious healthy meals and made my own new and improved shopping list. Your blog is extremely helpful and motivating, my roommates and I now look at it daily! Thanks girl!
