Date Night Recipe!

Would you like to make a delicious dinner for two? Instead of going out and paying top dollar for restaurant Mexican, here is a delicious recipe that is very delicious and easy to make! Secondly, it is a good substitution for Hamburger Helper or other boxed or frozen dinner varieties. Please try it out and tell me what you think!

Southwest Chicken Skillet

Ingredients
  • 1 tablespoon southwest chipotle flavored salt-free-seasoning
  • 1 tablespoon cooking oil
  • 1 pound skinless, boneless chicken breast halves, cut into bite-size strips
  • 1 medium yellow bell pepper, coarsely chopped
  • 1 small zucchini, bias cut and quartered
  • 1/2 medium onion, cut into then wedges
  • 1/2 cup bottled salsa
  • 1/2 cup frozen kernel corn
  • 1/2 cup cooked black beans
  • 4 8 inches whole wheat flour tortillas
Optional-
  • Hot cooked rice
  • Red bell peppers with tops and ribs removed
  • Chopped fresh cilantro
Directions:

Sprinkle chicken with seasoning
Heat oil over medium-high heat in a large skillet
Add chicken; reduce heat to medium.
Cook and stir about 2 minutes or until chicken is browned on all sides.
Add bell pepper, zucchini, and onion; cook and stir for 2-3 minutes more or until crisp tender

Serve with warm tortillas. Supplement rice and bell pepper if wanted. Sprinkle with cilantro if desired.
